Gourmet Grilled Cheese

anniemade: The Key to Gourmet Grilled Cheese - dijon and white wine!

If you’re like me and planning to host Turkey Day at your place, the last thing you want to do at the beginning of this week is make dinner. Gus and I are prepped for the big baking and cooking that Thursday will bring, but we are certainly not up to cooking at any point before then. We’re currently buried in exactly 11 boxes from Ikea that will hopefully transform our mini mess of a house in to a mini cuteness abode fit for two newlyweds. Can’t wait to share that journey with you on the blog in the weeks ahead.

In the meantime, I wanted to share my go-to recipe for kicked up grilled cheese. It’s the perfect meal to whip up when you’ve had a long day of putting swedish furniture together.

Ingredients (Makes 2 Sandwiches)

  • 4 Slices of a Favorite Bread (Our version is gluten-free, we used the Udi’s brand White Sandwich Bread found at Trader Joe’s)
  • 1 tbsp of butter, melted
  • 1 tsp of garlic power
  • 1/8 tsp of salt
  • 1/8 tsp of pepper
  • Dash of cayenne pepper (optional)
  • 1 tsp of white wine (any variety)
  • 1 tbsp dijon mustard
  • 4 slices of cheese (your choice – we used cheddar and fresh mozzarella)

Directions

This is how to prepare one sandwich at a time in a medium-size skillet.

Spread dijon mustard on one slice of your bread and set aside. Now you’ll create the awesome goodness that creates the crusty, buttery outside of the sandwich. To do this, Combine butter, garlic powder, salt, pepper, dash of cayenne, and white whine in a ramekin.

Heat your skillet to medium-low heat and set the slice of bread that does not have dijon spread on it in the skillet. While the bread is in the pan, brush the butter/wine mixture on the side facing up. Once brushed, flip the bread over and place your choice of cheese on the (now) warm slice of bread. Top with the other slice, dijon side touching the cheese. Brush the top of this new slice with the butter mixture.

After about 1-2 minutes (or until the side touching the skillet is golden), flip the sandwich so the buttery side you just created can get cooked and more delicious.

Once that side is also golden, you are all set to slice that baby and serve it with tomato soup. Om nom.
